Ingredients
  

For the Hamburger Patties

  • 1 ½ pounds ground beef (85% lean)
  • 1 small yellow onion, finely diced (half for patties, half sliced for potatoes)
  • 1 large egg
  • cup plain breadcrumbs
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Potato Layer

  • 4–5 medium (about 2 pounds) russet potatoes, peeled and sliced very thin (⅛-inch)
  • 1 large onion, thinly sliced

For the Gravy

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth (low-sodium)
  • ½ cup heavy cream or whole milk
  • salt and pepper to taste

For Garnish (optional)

  • fresh thyme or parsley

Instructions
 

  • Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
  • In a bowl, gently combine ground beef, finely diced onion (reserve half for slicing), egg, breadcrumbs, Worcestershire sauce, garlic powder, 1 teaspoon salt, and ½ teaspoon pepper. Mix just until incorporated, then shape into 6 oval patties about ¾-inch thick.
  • Heat a large skillet over medium-high heat with a drizzle of oil. Sear patties for 2 minutes per side until browned (they won't be cooked through). Transfer to a plate and keep the skillet for the gravy.
  • Scatter half the sliced potatoes in the prepared baking dish, then layer with the sliced onion (the remaining half from the patty mix) and a sprinkle of salt and pepper. Top with remaining potatoes.
  • Melt butter in the same skillet over medium heat. Whisk in flour and cook 1–2 minutes until golden and nutty. Gradually pour in beef broth while whisking constantly, bring to a simmer, and cook 3 minutes until thickened. Stir in heavy cream, then season with salt and pepper. The gravy should coat the back of a spoon.
  • Nestle the seared patties on top of the potatoes, then pour the gravy evenly over everything, letting it seep down into the layers.
  • Cover tightly with foil and bake for 40 minutes. Remove foil and bake 10 minutes more until bubbly and slightly colored.
  • Let the bake rest for 5–10 minutes before serving. Scoop into wide bowls, making sure each portion gets a patty, potatoes, and plenty of gravy. Garnish with fresh herbs if desired.

Notes

Slice potatoes paper-thin (⅛-inch) to ensure they cook through in the given time. Don't overwork the meat when mixing the patties. If the gravy seems too thin, simmer a bit longer; if too thick, whisk in a splash of broth. Resting the bake after the oven is key for the gravy to set. Leftovers keep 4 days in the fridge; the casserole can be frozen baked or unbaked for up to 3 months. Reheat covered at 325°F with a little broth.
