Amish Hamburger Steak That's Rich, Tender, and Ready in 40 Minutes

Ingredients
  

  • 1.5 lbs ground beef (80/20)
  • 1 medium yellow onion, sliced thin
  • 8 oz cremini mushrooms, sliced (optional but recommended)
  • 2 cups beef broth (low-sodium)
  • 1 tbsp Worcestershire sauce
  • 0.5 cup panko or plain breadcrumbs
  • 1 large egg
  • 3 tbsp all-purpose flour
  • 2 tbsp butter (or oil)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • fresh parsley for garnish (optional)

Instructions
 

  • Prep the patties: In a mixing bowl, combine ground beef, breadcrumbs, egg, 1 tsp salt, 1/2 tsp pepper, 1 tsp garlic powder, and 1 tsp Worcestershire sauce. Mix gently with your hands until just combined — don't squish it into a paste.
  • Form the patties: Divide into 4 equal portions and shape into oval patties about 1/2-inch thick. They'll shrink a little, so make them slightly larger than your bun if you're serving on bread.
  • Brown the patties: Heat 1 tbsp butter in a large skillet over medium-high heat. Add the patties (don't crowd — cook in 2 batches if needed). Cook 3–4 minutes per side until deeply browned. Transfer to a plate; they'll finish cooking in the gravy later.
  • Cook the onions and mushrooms: Add the remaining 1 tbsp butter to the pan. Toss in the sliced onion and mushrooms, scraping up any browned bits from the bottom. Cook 5–6 minutes until softened and starting to brown.
  • Make the gravy: Sprinkle the flour over the onions and mushrooms. Stir and cook 1 minute — this cooks out the raw flour taste. Slowly pour in the beef broth while whisking, scraping up every last bit from the pan. Add the remaining Worcestershire sauce. Bring to a simmer; the gravy will thicken in 2–3 minutes.
  • Return the patties: Nestle the browned patties back into the gravy. Spoon some gravy over the tops. Reduce heat to low, cover, and let simmer for 15 minutes. This is where the magic happens — the meat gets tender and the gravy deepens.

Notes

Important: Don't overmix the patties. Let them rest after browning before simmering. Taste the gravy before adding patties. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat gently in a skillet with a splash of broth.
