For the Salad
- 1 large head romaine lettuce, chopped
- 3 stalks celery, thinly sliced on a bias
- 2 large carrots, peeled into ribbons or thinly sliced
- 1 cup blue cheese crumbles
- 1/2 cup ranch or blue cheese dressing (plus more for serving)

Make the buffalo sauce: In a small saucepan over low heat, melt the butter. Whisk in the hot sauce and let it simmer gently for about 1 minute until smooth and glossy. Turn off the heat and set aside.
Toss the warm chicken: Shred the rotisserie chicken while still warm (or gently reheat if cold). Place in a large bowl, pour the buffalo sauce over, and toss with two forks (or your hands once cool enough) until every shred is coated. Let sit for 5 minutes.
Salt the veggies: In a medium bowl, toss the sliced celery and carrots with a generous pinch of salt. Let sit 5 minutes, then pour off any released water and pat dry with a paper towel.
Dress the lettuce: In a large salad bowl, add chopped romaine. Drizzle with about 1/4 cup of dressing and toss gently until every leaf is lightly coated.
