  • 2 cans fire-roasted corn (15-ounce cans), drained very well
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 cups shredded Mexican blend cheese
  • 1 to 2 fresh jalapeños, seeded and minced
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ cup chopped fresh cilantro, plus more for garnish
  • 3 green onions, thinly sliced

Instructions
 

  • Drain the corn: Open both cans of fire-roasted corn and dump into a strainer. Let sit while you prep everything else, pressing gently with a paper towel to remove excess liquid — this prevents a watery dip.
  • Soften the cream cheese base: In a large bowl, add softened cream cheese, sour cream, and mayonnaise. Stir until completely smooth, with no white streaks. (If cream cheese isn't soft, microwave for 20 seconds.)
  • Bloom the spices: Sprinkle garlic powder, cumin, chili powder, and salt over the creamy mixture. Stir vigorously for about 30 seconds to evenly distribute the spices.
  • Fold in the corn and cheese: Add the well-drained corn and shredded cheese. Fold gently until everything is evenly coated and the cheese is incorporated.
  • Add heat and fresh bits: Fold in the minced jalapeños, chopped cilantro, and sliced green onions. The dip should be colorful, creamy, and speckled with green.
  • Transfer and garnish (or chill if you can wait): Scoop the dip into a serving bowl. If time permits, cover and refrigerate for 30 minutes to let flavors meld. If not, serve immediately with tortilla chips, topped with extra cilantro, jalapeño slices, and a sprinkle of cheese.

Notes

Drain the corn thoroughly — excess liquid is the #1 reason for a watery dip. For the best smoky flavor, use fire-roasted corn; if unavailable, toast regular canned corn in a dry skillet. Soften cream cheese completely to avoid lumps. For a dairy-free version, use plant-based cream cheese, sour cream, and dairy-free shredded cheese. For extra heat, leave jalapeño seeds or add cayenne.
