Creamy Tuscan Gnocchi That Tastes Like a Restaurant Date Night — Ready in 25 Minutes

Ingredients
  

  • 1 lb potato gnocchi (refrigerated, not shelf-stable)
  • 1 tbsp olive oil (from the sun-dried tomato jar)
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan, plus more for serving
  • 1/4 tsp red pepper flakes (optional)
  • 5 oz fresh spinach
  • 1/2 cup reserved pasta water
  • Salt and black pepper to taste
  • Squeeze of lemon juice (optional but recommended)

Instructions
 

  • Bring a large pot of salted water to a boil. Have your cream measured, cheese grated, and spinach ready. The sauce moves fast once you start.
  • Boil the gnocchi: Drop the gnocchi into the boiling water. They will float to the surface in 2 to 3 minutes. The second they float, scoop them out with a slotted spoon or spider strainer. Reserve about 1 cup of the pasta water before draining.
  • Sauté the garlic and tomatoes: In your 12-inch skillet, heat 1 tablespoon of the oil from the sun-dried tomato jar over medium heat. Add the minced garlic and chopped sun-dried tomatoes. Cook for about 1 minute – just until the garlic is fragrant and the tomatoes soften. Do not let the garlic brown.
  • Build the cream base: Pour in the heavy cream. Stir in the grated Parmesan and red pepper flakes. Let it come to a gentle simmer – small bubbles around the edges. Stir occasionally until it thickens, about 2 minutes. Do not boil.
  • Add the spinach and gnocchi: Dump in the entire bag of spinach and the cooked gnocchi. Toss together with a wooden spoon or spatula. The spinach will wilt almost immediately. The gnocchi will start to absorb the sauce. If it looks too thick, add a splash of the reserved pasta water – about 1/4 cup usually does it.
  • Finish and serve: Remove the skillet from the heat. Squeeze half a lemon over the top. Taste and adjust salt – probably about 1/2 teaspoon – and a few cracks of black pepper. Serve immediately with extra Parmesan on top.

Notes

Storage: Best the night you make it, but keeps in a sealed container in the fridge for up to 2 days. The sauce thickens as it sits. Reheat gently on the stove with a splash of milk or cream. The microwave works in a pinch but may soften the gnocchi.
Freezing: Not recommended – the cream sauce can separate and the gnocchi turns soft.
Tips I learned the hard way: Don't overcook the gnocchi in the water – pull it the moment it floats. Always reserve pasta water even if you think you won't need it. Grate your own Parmesan – pre-shredded has anti-caking agents that make the sauce grainy. And don't skip the lemon – it cuts the richness and brightens everything.
