Easy Chicken Taco Soup

This is the soup that tastes like it simmered all day but comes together in 30 minutes. Fire-roasted tomatoes, green chiles, and a squeeze of lime make it deeply flavorful. My family calls it confetti soup because of all the colors in the bowl.

  • 1 ½ lbs boneless skinless chicken thighs
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (4 oz) diced green chiles
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 4 cups chicken broth
  • 1 whole lime
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced

  • 2 tbsp olive oil

Instructions
 

  • Brown the chicken: Heat a glug of oil in your pot over medium-high heat. Season the chicken thighs generously with salt and pepper. Sear them for about 3-4 minutes per side until they are golden brown. They don't need to be cooked through. Pull them out onto a plate.
  • Cook the aromatics: Drop your diced onion into the hot pot and stir, scraping up the browned bits from the bottom. Cook for 3 minutes until it softens and turns translucent. Add the minced garlic and cook for 30 seconds — just until it's fragrant.
  • Bloom the spices: Stir in the cumin and chili powder. Cook for exactly 60 seconds. The smell that hits you right now is the smell of dinner happening. It goes from raw to toasty very fast, and that change is information.
  • Add everything else: Pour in the fire-roasted tomatoes (with their juices), the diced green chiles, and the chicken broth. Stir to combine. Nestle the chicken thighs back into the liquid. Bring it to a gentle boil.
  • Simmer: Reduce the heat to low. Let it simmer uncovered for 20-25 minutes. The liquid will reduce just slightly and the flavor will concentrate. You'll see the color deepen to a rich red-gold.
  • Shred the chicken: Pull the chicken out of the pot and set it on the plate. Shred it with two forks — it should break apart very easily with almost no resistance. If it's still a little tough, let it simmer for another 10 minutes before shredding. Return the shredded chicken to the pot.
  • Finish and serve: Turn off the heat. Squeeze the juice of a full lime into the pot and stir. This is the step that brightens everything. Ladle into bowls and pile on your favorite toppings.

Notes

Don't skip browning the chicken — it builds the flavor base. Taste for salt at the end as brands vary. The lime juice is not optional; it cuts through the richness. Let the spices bloom for a full minute before adding liquid. Leftovers keep in the fridge for up to 5 days and freeze beautifully for 3 months. Reheat with a splash of broth.
