  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives
  • 0.5 cup crumbled feta cheese

Instructions
 

  • Marinate the shrimp: Toss the shrimp with olive oil, garlic, oregano, lemon zest, salt, and pepper. Let sit at room temperature for 15 minutes.
  • Prep the vegetables: While the shrimp marinates, dice the cucumber, halve the tomatoes, and crumble the feta. Set everything aside.
  • Heat the skillet: Place your skillet over medium-high heat. Let it get hot — a drop of water should sizzle aggressively on contact.
  • Sear the shrimp: Add the shrimp to the hot pan in a single layer. Don't crowd them. Work in batches if your pan is small. Cook 2 minutes on the first side until deeply golden. Flip and cook 1-2 minutes more. The second they curl into a 'C' shape, they're done.
