  • 4 medium zucchini (about 8-9 inches long), halved lengthwise and scooped
  • 1 lb ground beef (85/15 recommended)
  • 1 cup crushed tomatoes or thick tomato sauce (fire-roasted preferred)
  • 1 cup shredded low-moisture mozzarella (freshly grated)

Filling Aromatics

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp fennel seeds (optional but recommended)

  • 1 tsp salt (for sweating zucchini)

  • Salt and black pepper, to taste
  • Fresh parsley or basil for garnish (optional)

Instructions
 

  • Halve and scoop: Slice each zucchini in half lengthwise. Use a small spoon to scoop out the center, leaving about a 1/4-inch thick wall. You want a sturdy boat, not a paper-thin shell.
  • Salt and sweat: Sprinkle the cut sides of the zucchini with about 1 tsp of salt. Place them cut-side down on a paper towel-lined baking sheet. Let them sit for 20 minutes. You'll see beads of water forming – blot dry with another paper towel before filling.
  • Brown the beef: While the zucchini sweats, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until well browned, about 5-7 minutes. Transfer to a bowl with a slotted spoon, leaving a little fat in the pan.
  • Cook the aromatics: Add the diced onion to the same pan. Cook for 3-4 minutes until soft. Add garlic, oregano, and fennel seeds (if using) and cook for 30 seconds until fragrant.
  • Finish the filling: Return the beef to the pan. Add crushed tomatoes, a pinch of salt, and black pepper. Simmer for 5 minutes until thickened. Stir in half the mozzarella – this helps bind the filling.
  • Stuff the boats: Preheat oven to 400°F (200°C). Arrange prepped zucchini boats in your baking dish. Spoon filling generously into each boat, pressing down slightly. Top with remaining mozzarella.
  • Bake: Bake for 20-25 minutes until zucchini is tender (pierce easily with a fork) and cheese is melted and golden in spots.
  • Rest and serve: Let boats rest in the dish for 5 minutes before serving. Garnish with fresh parsley or basil if desired.

Notes

Don't skip the sweating step – it's the key to firm zucchini boats. For meal prep, store in the fridge for up to 4 days. They freeze beautifully: assemble unbaked, freeze on a sheet pan, then wrap individually. Bake from frozen at 375°F for 35-40 minutes. Reheat in the oven or air fryer at 350°F for 8-10 minutes to keep from getting mushy.
