Ingredients
  

  • 1 ½ lbs boneless, skinless chicken thighs (or breasts)
  • 2 large sweet potatoes (about 1 ½ lbs), peeled and cut into 1½-inch chunks
  • 1 red onion, cut into 1-inch wedges
  • 2 tbsp olive oil, divided
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt, divided
  • ¼ tsp black pepper, divided
  • 2-3 sprigs fresh rosemary or thyme (optional)

Instructions
 

  • Preheat the oven to 425°F with the rack in the upper third. Place a large rimmed sheet pan in the oven while it preheats – you want the pan screaming hot when the vegetables hit it.
  • Toss the sweet potato chunks and red onion wedges with 1 tbsp olive oil, ¼ tsp salt, and a pinch of the pepper. Carefully remove the hot sheet pan from the oven, dump the vegetables onto it, and spread into a single layer. Roast for 10 minutes. The potatoes should look glossy and just beginning to caramelize on the bottom edges.
  • While the vegetables roast, pat the chicken thighs dry with a paper towel. In the same bowl, toss the chicken with the remaining 1 tbsp olive oil, smoked paprika, cumin, garlic powder, ¼ tsp salt, and the remaining black pepper. Coat evenly.
  • Remove the pan from the oven. Push the vegetables to the sides, creating space in the center. Place the chicken thighs in a single layer in the center. Nestle the rosemary sprigs around if using. Leave a little space between each thigh for crispy edges.
  • Return the pan to the oven and roast for 18-22 minutes. The chicken is done when it reaches 165°F in the thickest part or the juices run clear. The sweet potatoes should be tender and caramelized on the edges.
  • Let the pan rest for 5 minutes before serving. This allows the juices to reabsorb into the chicken. Slice and serve warm with your choice of sides.

Notes

For crispy sweet potatoes, make sure your pan is hot before adding the vegetables. Pat the chicken dry for better browning. Don't crowd the pan – use a large enough sheet pan. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in a 375°F oven for 10 minutes or in an air fryer at 350°F for 5 minutes to restore crispiness.
