Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 very ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 1/3 cup coconut oil or unsalted butter, melted
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup chopped pecans, walnuts, or sunflower seeds

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the oats, flour, cinnamon, baking soda, and salt. You should see the cinnamon streak through the oats like ribbons – that means it's evenly distributed.
  • In a medium bowl, mash the bananas well, then stir in the applesauce, melted coconut oil, honey, egg, and vanilla until smooth. It will look a little thinner than you expect – that's right.
  • Pour the wet ingredients into the dry. Stir with a wooden spoon until just combined – no dry streaks left, but don't overmix. Fold in the cranberries and pecans.
  • Let the dough rest on the counter for 10 minutes. This step is critical: it lets the oats absorb the liquid so the cookies bake up thick and soft instead of flat and dry. After resting, the dough should look noticeably thicker and less glossy.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Do not flatten the scoops – they will spread slightly in the oven but stay thick.
  • Bake for 12 to 14 minutes. The edges should be set and just starting to turn golden. The centers will look soft and matte – not wet, but not fully firm. The kitchen will smell like spiced oatmeal and warm bananas.
  • Let the cookies sit on the baking sheet for 5 minutes – they will continue setting as they cool – then transfer to a wire rack. If you try to move them immediately, they will fall apart.

Notes

Storage: Store in an airtight container in the fridge for up to 5 days. Freeze baked cookies in a single layer, then transfer to a freezer bag for up to 3 months. Reheat: 10 seconds in the microwave or 3 minutes in a 300°F oven.
Substitutions: For dairy-free, use coconut oil. For gluten-free, use certified GF oats and 1:1 GF flour blend. For nut-free, swap pecans for sunflower seeds. For vegan, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water, let sit 5 minutes).
