Hearty Slow Cooker Minestrone

This hearty slow cooker minestrone simmers all day with a deep, rich broth thanks to a quick sauté and one secret Parmesan rind. Just 15 minutes of prep and the crockpot does the rest while you feed the whole crew.

Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 6 cups vegetable broth
  • 1 Parmesan rind
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper

Added at the End

  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 small zucchini, diced
  • 1 cup fresh green beans, trimmed and cut into 1-inch pieces

For Serving

  • 1 cup small pasta (ditalini, mini shells, or elbows), cooked separately
  • Fresh basil and shredded Parmesan, for serving

Instructions
 

  • Prep the vegetables: Dice the onion, peel and dice the carrots, dice the celery, and mince the garlic before you start.
  • Sauté: Warm the olive oil in a large skillet over medium heat. Add the onion, carrots, celery, and a pinch of salt. Cook for 5-6 minutes until the onion is translucent and smells sweet.
  • Bloom the garlic and tomato paste: Stir in the minced garlic and tomato paste. Keep stirring for about one minute until the paste turns a rusty red and smells amazing.
  • Transfer and build the broth: Scoop the sautéed mixture into the slow cooker. Add crushed tomatoes, vegetable broth, Parmesan rind, oregano, basil, thyme, bay leaf, salt, and pepper. Stir well.
  • Cook low and slow: Cover and cook on low for 6 hours or on high for 3 hours. The kitchen should smell like Sunday dinner by hour four.
  • Add the delicate stuff: About 30-45 minutes before serving, stir in the drained beans, zucchini, and green beans. Let them warm through and soften just a bit.
  • Cook the pasta separately: Bring a small pot of salted water to a boil. Cook the pasta until just shy of al dente, about one minute less than the package says. Drain, toss with a tiny drizzle of olive oil, and set aside.
  • Finish and serve: Remove the bay leaf and Parmesan rind. Taste and adjust salt and pepper. Ladle the soup into bowls, add a scoop of pasta to each, and top with fresh basil and shredded Parmesan.

Notes

Storage: Keep the soup minus pasta in the fridge for 4-5 days. Store pasta separately and add when reheating. Freeze soup for up to 3 months. Substitutions: For vegan, skip the Parmesan rind and use vegan Parmesan. For gluten-free, swap pasta for cooked rice or gluten-free pasta. Don't skip the sauté — it builds the deep flavor that makes this taste like it cooked all day.
