Deglaze and simmer: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Return the chicken to the skillet, nestling it into the rice and corn. Bring to a gentle simmer.
Cover and cook: Reduce heat to low. Cover tightly and cook for 20 minutes. Do not lift the lid! The steam is doing the work.
