Naturally Flavored Water: Cucumber Mint Lime Cold-Infused Pitcher

Ingredients
  

For the Pitcher

  • 1/2 English cucumber, thinly sliced (or 1 regular cucumber, peeled if the skin is thick)
  • 8 to 10 leaves fresh mint, gently bruised
  • 1 lime, sliced into 1/4-inch rounds
  • 8 cups cold filtered water

Optional Add-In

  • 4 to 5 slices fresh ginger, paper-thin

Instructions
 

  • Prep the fruit and herbs: slice 1/2 English cucumber into 1/8-inch rounds, cut 1 lime into 1/4-inch slices, and rinse the mint. Gently bruise the mint leaves with the back of a wooden spoon — just enough to smell the mint in the air.
  • Layer everything in the pitcher: drop the cucumber and lime in first, then tuck the bruised mint leaves between the slices so the water moves through all three flavors evenly.
  • Pour in 8 cups of cold, filtered water. Do not use warm water — warm water pulls bitter flavors out of the lime pith and mint stems. Cold water keeps the whole pitcher bright.
  • Stir gently with the wooden spoon and taste a spoonful. You should catch the cucumber at the back of your tongue — that is your signal that the infusion has started.
  • Refrigerate for 2 to 4 hours. At 2 hours, it is light and refreshing; at 4 hours, it is ready for guests. The water shifts from clear to a soft, milky green — that is the visual cue.
  • Serve over ice. Leave the fruit in the pitcher for refills, or strain through a fine-mesh sieve into a fresh pitcher for a cleaner look. The first glass goes fast.

Notes

Don't chop the mint — bruise it gently or the leaves turn bitter. Pull the lime slices out after about 12 hours and add fresh ones for serving. The pitcher keeps for up to 2 days covered; flavors peak between 12 and 24 hours. For freezer-friendly prep, freeze sliced cucumber, lime, and mint flat in a zip-top bag, then drop them straight into cold water.
