One Pot Broccoli Pasta That's Creamy, Not Watery — Ready in 30 Minutes

Ingredients
  

  • 12 oz short pasta (cavatappi, shells, or rigatoni)
  • 1 head broccoli (about 3 cups florets)
  • 4 cloves garlic, thinly sliced
  • 1/2 tsp red pepper flakes (optional)
  • 1 1/2 cups grated sharp cheddar
  • 1/2 cup grated Parmesan
  • 2 tbsp butter
  • 3 1/2 cups water
  • 1 tsp salt, plus more to taste
  • 1/2 lemon lemon (optional)

Instructions
 

  • Sauté the aromatics: Heat 2 tablespoons of olive oil in your pot over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is fragrant, about 1 minute. Don't let it brown — you want it golden and soft.
  • Cook the pasta: Add the dry pasta, 1 teaspoon of salt, and 3 1/2 cups of water. Bring to a boil, then reduce to a brisk simmer. Cook, stirring occasionally, until the pasta is almost al dente and most of the water has been absorbed, about 10-12 minutes. (You should see just a thin, starchy sheen at the bottom of the pot — not a pool of liquid. If it's looking dry before the pasta is done, add a splash of water.)
  • Add the broccoli: Scatter the broccoli florets over the top of the pasta. Do not stir them in yet. Cover the pot and let the broccoli steam for 3-5 minutes, until it's bright green and just fork-tender. (The broccoli should be vivid and glossy against the pasta — that's the sweet spot. I usually stir it in gently right at the 4-minute mark.)
  • Finish off the heat: Remove the pot from the heat entirely. Add the grated cheddar, Parmesan, and butter. Stir vigorously for a full 30-45 seconds. The sauce will look loose at first — don't panic. Keep stirring. It tightens into a creamy, dreamy coating as the cheese emulsifies with the starchy water.
  • Adjust and serve: Taste it. Add more salt if it needs it. Squeeze in half a lemon if it feels heavy. Serve hot, topped with extra Parmesan, a pinch of red pepper flakes, or fresh black pepper.

Notes

Don't drain the pasta — the starchy water is the key to the creamy sauce. Cut broccoli into small bite-sized pieces. Add cheese off the heat to avoid graininess. Store leftovers in the fridge for up to 3 days; reheat in a skillet with a splash of water. For gluten-free, use sturdy GF pasta. For dairy-free, use vegan cheddar and nutritional yeast.
