Smash Burger Bowl That's Crispier, Juicier, and Faster Than a Regular Burger

Ingredients
  

  • 1.5 lbs ground beef (80/20)
  • 1 tbsp butter or avocado oil
  • salt and black pepper, to taste
  • 4 slices American cheese

For the Bowls

  • 4 cups shredded iceberg lettuce
  • 1/2 cup dill pickle chips
  • 1/4 cup yellow onion, finely diced

For the Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle juice
  • 1/4 tsp smoked paprika

Instructions
 

  • Divide the beef into 4 equal balls (about 6 oz each). Keep them loose; don't pack tightly.
  • Heat a cast iron skillet over high heat for 5 minutes until smoking. Add butter or oil — it should shimmer immediately.
  • Place beef balls in the pan, lay a piece of parchment over each, and press down hard with a second spatula or flat-bottomed pan to smash to 1/4-inch thick. Season generously with salt and pepper.
  • Cook undisturbed for 3–4 minutes until edges are deep brown and the crust is set. Slide a thin spatula under each patty (don't scrape) and flip in one motion. Immediately top with a slice of cheese. Cook 30 seconds more.
  • Divide shredded lettuce among 4 bowls. Place cheesy patties on top, then scatter pickle chips and diced onion over each.
  • Whisk together all sauce ingredients. Drizzle generously over each bowl. Serve immediately while the patties are still crispy.

Notes

Make sure your pan is screaming hot — 5 minutes over high heat. Use parchment paper to smash the patties for a perfect crust without sticking. For meal prep, make the sauce ahead and portion the beef balls. Store cooked patties separately from lettuce. Reheat in a hot skillet for 30 seconds per side to restore the crispy crust. The sauce keeps for up to a week in the fridge.
