Sparkling Lime Mint Punch

The first sip is all lime, bright and sharp. The mint follows a second later, not overpowering, just present enough to cool you from the inside out. Ready in under 10 minutes of active work, this punch uses a cold muddle technique that keeps mint from turning bitter and lime from dulling.

Ingredients
  

  • 1 cup fresh lime juice (about 6-8 limes)
  • 1 cup fresh mint leaves, packed, plus more for garnish
  • 3/4 cup granulated sugar
  • 1 1/2 cups cold water
  • 4 cups chilled sparkling water or club soda
  • Ice
  • Lime wheels and mint sprigs for serving

Instructions
 

  • Muddle the mint and sugar: Add the mint leaves and sugar to your pitcher. Use the wooden spoon to press and twist the mint into the sugar for about 1 minute. You are not trying to destroy the leaves — you are trying to release their oils. The sugar will turn pale green and smell intensely, wonderfully minty. (You are looking for the sugar to look like damp, fragrant sand. Stop pressing when it smells like a garden. If it starts to look like a green paste, you have gone too far.)
  • Add the cold water and lime juice: Pour in the cold filtered water and the fresh lime juice. Stir until the sugar is fully dissolved. A quick taste here should be sharp and sweet, with a strong mint backbone that sits right at the back of your throat.
  • Chill (at least 2 hours): Cover the pitcher and refrigerate. I know two hours feels like an eternity when you are thirsty. This waiting step is not optional — it lets the mint flavor deepen and marry with the lime without turning bitter. (After 2 hours, the liquid will be a pale, translucent gold-green. Hold it up to the light. It should look clear, not cloudy. Smell it — it should smell like a bright spring day.)
  • Assemble right before serving: Fill the pitcher with ice. Pour the chilled sparkling water over the ice. Give it a gentle stir — one or two rotations. You want to incorporate the bubbles without knocking all the carbonation out of the water.
  • Garnish and pour: Float the reserved lime wheels and mint sprigs on top. Pour into ice-filled glasses, making sure everyone gets a lime wheel and a small sprig in their glass. Serve immediately.

Notes

Do not skip the chilling time. The first time I made this, I served it immediately and it tasted like sugar water with a vague hint of mint. The chill time is when the magic happens.
Make ahead: The base (without sparkling water) keeps for up to 3 days in the fridge. Freeze the base into ice cubes for zero dilution.
Variations: Add 1 cup white rum, tequila, or gin for an adult version. Swap half the sparkling water for lemon-lime soda for a kid-friendly twist. Add basil or rosemary for an herbal note.
