Spicy Cream Pasta Sauce

Ingredients
  

  • 1 1/2 cups heavy cream
  • 4 oz pancetta or bacon, diced
  • 1/2 to 1 teaspoon red pepper flakes
  • 3 cloves garlic, minced
  • 1 cup freshly grated Parmesan
  • 1/2 cup starchy pasta water (reserved)
  • 12 oz pasta (fettuccine, linguine, or rigatoni)
  • salt and fresh black pepper to taste
  • fresh parsley or basil for garnish (optional)

Instructions
 

  • Start the pasta: Bring a large pot of well-salted water to a rolling boil. Drop your pasta and cook it to al dente, according to the package directions.
  • Render the pancetta: Add the diced pancetta to a cold skillet. Turn the heat to medium. Let it render slowly, stirring occasionally, until it's deeply golden and crispy — about 5 to 6 minutes. You'll know it's ready when the fat has turned translucent and the meat is browned at the edges. Don't rush this step.
  • Remove the pancetta: Use a slotted spoon to lift the crispy bits out of the skillet and onto a paper-towel-lined plate. Leave the rendered fat in the pan. Lower the heat to low.
  • Bloom the aromatics: Add the minced garlic and red pepper flakes to the warm fat. Cook for 30 seconds, stirring constantly — just until the garlic is fragrant. The second the garlic hits the hot fat, you'll smell it. That's your signal to add the liquid. Do not let the garlic brown.
  • Add the cream: Pour in the heavy cream and stir, scraping up any browned bits from the bottom of the pan. Let it come to a gentle simmer — not a boil, just a soft shiver at the edges.
  • Add the pasta water: Ladle in ½ cup of the reserved starchy pasta water. Whisk until the sauce is smooth and slightly thinned out.
  • Melt in the Parmesan: Add the grated parmesan a handful at a time, whisking constantly. Keep whisking until the cheese is fully melted and the sauce is smooth and coats the back of a spoon. The sauce should look like thick, pourable cream — it will thicken more as it sits.
  • Combine pasta and sauce: Drain the pasta (reserve a little more pasta water just in case) and add it directly to the skillet. Toss with tongs for 1 to 2 minutes, letting the sauce work its way into every strand.
  • Season and adjust: Add a pinch of salt and several generous grinds of black pepper. If the sauce has tightened up, add a splash more pasta water — a tablespoon at a time — until it flows like honey.
  • Serve immediately: Divide the pasta among bowls. Top with the crispy pancetta and a sprinkle of fresh parsley or basil. Eat it right away — this one doesn't wait well once it's all combined.

Notes

The pasta water is non-negotiable — it's the glue that holds the sauce together. Keep the heat low when adding the cream to prevent curdling. Grate your own parmesan for a smooth sauce. Season the pasta water well.
