Sweet Potato and Chickpea Curry: The One-Pot Version That Actually Works

For the curry

  • 1 tablespoon coconut oil (or any neutral oil)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted if possible)
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed into 1/2-inch pieces
  • 1 cup water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (13.5 oz) full-fat coconut milk

Instructions
 

  • Prep: Dice the onion, mince the garlic, grate the ginger, cube the sweet potatoes. Open all the cans. Measure the spices into a small bowl so you can dump them in one go.
  • Heat the coconut oil in your pot over medium heat. Add the diced onion and cook, stirring occasionally, until soft and translucent — about 5 minutes. Add the garlic and ginger and cook for another minute until fragrant. If the garlic starts to brown too quickly, lower the heat — burnt garlic ruins the whole thing.
  • Add the curry powder, cumin, and cayenne (if using). Stir constantly for about 30 seconds until the spices smell warm and toasty. You'll know it's ready when the kitchen smells like a curry house. (Photo tip: At this stage, the spices should be coating the onions in a thick, fragrant paste — if it looks dry, add a splash of water before burning.)
  • Pour in the diced tomatoes (with their juices) and stir, scraping up any browned bits from the bottom of the pot. Add the cubed sweet potatoes, 1/2 teaspoon salt, and 1 cup of water. Bring to a boil.
  • Reduce heat to low, cover the pot, and let it simmer for 15–20 minutes, until the sweet potatoes are just fork-tender. Check at 15 minutes — the cubes should offer a little resistance but not be hard in the center. (Photo tip: The liquid should be bubbling gently around the potatoes, not boiling aggressively — you want a lazy bubble, not a frantic one.)
  • Uncover the pot. Stir in the drained chickpeas and the full can of coconut milk. Bring back to a gentle simmer and cook for another 5 minutes, uncovered, to let the sauce thicken slightly. Resist the urge to turn up the heat — high heat can make the coconut milk separate. Keep it at a low bubble.
  • Taste and add more salt or a pinch of cayenne if you want more heat. Turn off the heat and let the curry sit for 5 minutes. This is the magic rest — the sweet potato absorbs the spices, and the sauce thickens to just the right consistency. Meanwhile, make the rice or toast the naan.
  • Ladle over steamed rice or with warm naan. Top with cilantro or a squeeze of lime if you like. My kids prefer it with extra yogurt on the side — the coolness balances the warmth.

Notes

Storage: Refrigerate in an airtight container for up to 5 days. Freeze for up to 3 months. Reheat gently on the stovetop or microwave, adding a splash of water or coconut milk if too thick. Pro tips: Cube sweet potatoes uniformly (1/2-inch) for even cooking. Add a tablespoon of tomato paste with the canned tomatoes for deeper flavor. Taste and adjust seasoning at the end. The curry thickens as it cools, so don't over-reduce while cooking. Swaps: Substitute light coconut milk for a thinner sauce, or oat milk/cashew cream for a non-coconut option. Add spinach or kale for extra veg.
