Taco Stuffed Sweet Potatoes

Ingredients
  

For the Potatoes and Filling

  • 4 medium sweet potatoes, scrubbed
  • 2 tbsp olive oil, divided
  • 1 lb ground beef (80/20)
  • 3 tbsp taco seasoning (store-bought or homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or fresh sweet corn
  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions
 

  • Cut each sweet potato in half lengthwise. Drizzle with 1 tbsp olive oil and season generously with salt and pepper. Rub the oil and seasoning into the cut sides. Place the potatoes cut-side down on the sheet pan. (Photo tip: The potatoes should be nestled snugly, cut-side flat against the parchment. This is how you get that caramelized, golden crust.)
  • Roast for 25-30 minutes, until the potatoes are tender when pierced with a fork and the cut sides have a deep golden-brown crust. The smell of roasting sweet potatoes fills the kitchen with a sweetness that's almost dessert-like. Don't skip the cut-side down method — it makes all the difference.
  • While the potatoes roast, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes. Drain off excess fat if necessary. Add the taco seasoning, drained black beans, and frozen corn. Stir to combine. Add 1/4 cup water and let it simmer for 2-3 minutes, until the liquid thickens slightly. (Photo tip: The filling should look thick and cohesive — not soupy. If it looks dry, add another splash of water.)
  • When the potatoes are done, remove the sheet pan from the oven. Carefully flip each potato over using a spatula. Fluff the insides slightly with a fork. Spoon the taco meat mixture evenly over each potato half. Sprinkle the shredded cheese over the top.
  • Turn the oven to broil. Return the sheet pan to the oven for 1-2 minutes, just until the cheese is melted and bubbly. Watch it carefully — it goes from melted to burnt in seconds. I stand right in front of the oven for this step.
  • Remove from the oven. Let them cool for 2 minutes (the insides are molten hot). Top with a dollop of sour cream, diced avocado, fresh cilantro, and a squeeze of lime. Serve immediately.

Notes

Don't skip the cut-side-down roasting – it caramelizes the natural sugars and makes the potatoes creamy. Season the potatoes well with about 1/2 teaspoon of kosher salt per half. Drain black beans thoroughly to avoid watery meat. Let the assembled potatoes rest for 2 minutes before serving to let the filling settle. Make your own taco seasoning to control salt and spice. For meal prep, store potatoes and filling separately in the fridge for up to 4 days; the filling freezes well for up to 3 months. Reheat potatoes in the microwave and filling in a skillet, then assemble and broil for 1 minute.
