The Best Shrimp Fettuccine Alfredo (No Heavy Cream Needed – Just Real Parm & a Little Patience)

Ingredients
  

  • 1 lb fettuccine or linguine (16 oz)
  • 1 lb large shrimp (21-25 count), peeled and deveined
  • 4 tbsp unsalted butter (half a stick)
  • 1 1/2 cups freshly grated Parmigiano-Reggiano
  • 3 cloves garlic, finely minced
  • 1/2 tsp salt, plus more for pasta water
  • 1/2 tsp freshly cracked black pepper, plus more for serving
  • 2 tbsp olive oil

Instructions
 

  • Get Everything Ready: Set your skillet over medium-high heat and add the olive oil. Pat the shrimp completely dry with paper towels. Dry shrimp = crispy sear.
  • Sear the shrimp: Add the shrimp to the hot oil in a single layer. Season with a pinch of salt and pepper. Cook for 1-2 minutes per side until pink and slightly charred. Transfer to a plate.
  • Boil the pasta: Bring a large pot of generously salted water to a rolling boil. Drop the fettuccine and cook until al dente (1 minute less than the package says). Reserve 2 cups of pasta water right before you drain it. Drain the pasta (don't rinse it!).
  • Make the sauce base: In the same large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds – don't let it burn.
  • Emulsify the sauce: Add 1 cup of the reserved pasta water to the skillet. Let it simmer for 1 minute. Turn the heat to low. Add the drained fettuccine and using tongs, toss the pasta. It will look watery at first – don't panic.
  • Add the cheese: Sprinkle the freshly grated Parmesan over the pasta, one handful at a time, tossing constantly with the tongs. The sauce will come together and get creamy and glossy.
  • Finish the dish: Add the shrimp back to the skillet. Toss everything together until the shrimp is heated through. Season with the black pepper and another crack of salt if needed. If the sauce gets too thick, add a splash of the reserved pasta water to loosen it.

Notes

Important tips from years of testing:
- Grate your own Parmigiano-Reggiano from a wedge – pre-shredded has cellulose that prevents smooth melting.
- Reserve extra pasta water (2 cups) to adjust consistency at the end.
- Don't overcook the shrimp; pull them the second they turn opaque and curl slightly.
- For reheating leftovers, add a splash of water or milk in a skillet over medium-low heat to restore creaminess.
