The Homemade Alfredo Sauce You'd Never Guess Takes Only 15 Minutes

This homemade alfredo sauce comes together in 15 minutes with just 6 pantry staples. It's silky, restaurant-smooth, and the one pasta recipe my kids beg for on busy school nights. Keep the heat low, grate fresh parmesan, and save a little pasta water for a glossy finish every time.

Ingredients
  

For the Sauce

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese (about 4 ounces)
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • 1/4 teaspoon salt, plus more to taste
  • Freshly cracked black pepper, to taste
  • 1 pinch ground nutmeg (optional)

For Serving

  • 12 ounces fettuccine
  • 1/2 cup reserved pasta water

Instructions
 

  • Bring a large pot of generously salted water to a rolling boil and cook the fettuccine according to package directions. Before draining, reserve about 1 cup of pasta water.
  • In a large skillet or saucepan over medium-low heat, melt the butter until foamy. Do not let it brown.
  • Add the minced garlic and cook for 30 to 60 seconds, just until fragrant. If the garlic starts to brown, pull the pan off the heat.
  • Slowly pour in the heavy cream while whisking. Turn the heat up to medium and bring to a gentle simmer — small bubbles around the edges, not a rolling boil.
  • Reduce the heat to low. Add the grated parmesan in three or four small handfuls, whisking constantly until each handful melts completely before adding the next.
  • Stir in salt, cracked black pepper, and the pinch of nutmeg if using. Cook on low for 2 to 3 minutes, stirring occasionally, until the sauce coats the back of a spoon.
  • Add the hot drained fettuccine to the sauce and toss to coat. Add reserved pasta water 1 to 2 tablespoons at a time until the sauce turns glossy and clings to every strand.
  • Serve immediately topped with extra parmesan and cracked black pepper.

Notes

Make ahead: Grate the parmesan, mince the garlic, and measure the cream the night before to cut weeknight prep. Cook the sauce fresh for the best texture.
Storage: Leftover alfredo keeps in an airtight container in the fridge for up to 3 days. Reheat low and slow on the stovetop with a splash of milk or pasta water, whisking until smooth. Freezing is not recommended because cream sauces turn grainy.
