Warm, Gooey Banana Cream Cheese Cobbler with a Buttery Golden Crust

Ingredients
  

  • 3 large ripe bananas (yellow with brown spots, not mushy)
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar (for batter)
  • 1/4 cup granulated sugar (for cream cheese)
  • 1 cup whole milk
  • 1 tsp pure vanilla extract
  • 1 cup all-purpose flour, spooned and leveled
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions
 

  • Preheat your oven to 350°F. Place the 1/2 cup of butter in your 9x13 baking dish and put it in the oven while it preheats, just until the butter is fully melted. About 5-7 minutes.
  • In a medium bowl, beat the softened cream cheese with 1/4 cup of sugar and the vanilla extract until it is completely smooth and fluffy, about 2 minutes. Set aside.
  • In a large bowl, whisk together the flour, remaining 1 cup of sugar, baking powder, and salt. Pour in the milk and stir just until combined — do not overmix. A few lumps are fine.
  • Carefully remove the hot dish with the melted butter from the oven. Pour the batter evenly over the butter. Do NOT stir. The butter will pool around the edges of the batter — this creates the crisp, golden edge.
  • Slice the bananas directly over the batter. Drop spoonfuls of the cream cheese mixture over the top of the bananas and batter. It does not need to be perfect. Don't worry if the cream cheese sinks in spots — that creates hidden pockets of cheesecake.
  • Bake for 35-40 minutes, until the top is deep golden brown and the edges are bubbly. The kitchen will smell like caramelized bananas and browned butter — that is how you know it is close. Let it cool for at least 10 minutes before serving. The filling sets as it rests.

Notes

Make Your Own: Add 1/2 cup toasted pecans or walnuts for crunch, or 1/2 cup chocolate chips for a chocolate-banana version. For gluten-free, use a 1:1 gluten-free flour blend (King Arthur Measure for Measure works well). For a smaller batch, cut everything in half and bake in an 8x8 dish, checking at 25 minutes.
Storage: Keep leftovers covered in the fridge for up to 3 days. Reheat in a 300°F oven for 10-12 minutes to restore crispness. The microwave works but the top will lose its texture. Freezing is not recommended.
Heidi's Tips: Do not overmix the batter — a few lumps are fine. Use ripe but firm bananas, not mushy ones. Let the cobbler cool for at least 10 minutes before serving so the cream cheese layer can set. The melted butter step is non-negotiable — it creates that crispy, buttery edge.
