Cream Cheese Base

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 pinch red pepper flakes (optional)

Instructions
 

  • Preheat the oven to 375°F and set the rack in the upper third. The dip browns on top before it overbakes at the bottom, which is exactly what you want.
  • In a mixing bowl, combine the cream cheese, sour cream, mayonnaise, Italian seasoning, garlic powder, and onion powder. Beat until completely smooth — no streaks, no lumps. Two minutes with a hand mixer or about forty firm strokes with a spatula works.
  • Scrape the cream cheese mixture into a 9-inch cast iron skillet or oven-safe baking dish and spread it evenly. A slightly thicker layer at the edges is fine; it helps the dip hold together when you scoop.
  • Pour the marinara over the cream cheese layer and spread it gently, leaving about a half-inch border around the edge. That border keeps the sauce from bubbling over and lets a little of the creamy base peek through like a crust.
  • Sprinkle 1 1/2 cups of the mozzarella and all the Parmesan evenly over the sauce. Add the remaining 1/2 cup mozzarella, then scatter the chopped pepperoni. Press a few whole pepperoni slices into the top so they curl and crisp as they bake.
  • Bake for 15 to 18 minutes, until the edges are bubbling and the cheese is fully melted. The edges bubble slowly and the cheese picks up a few dark spots. When you see those, it's done. Don't wait for the center to boil; that's when the cream cheese separates.
  • Let the dip rest for 5 minutes before serving. It will be lava-hot if you dig in immediately, and the texture needs a minute to settle. Garnish with fresh basil if you have it, then set out the breadsticks, crostini, chips, or veggies.

Notes

Build this dip the night before if you want: assemble without baking, cover tightly, and refrigerate up to 2 days. Add 5 to 8 extra minutes to the bake time when starting from cold. Pat pepperoni dry with a paper towel before chopping — this keeps the top glossy instead of oily. Shred mozzarella from a block for the stretchiest melt. Leftovers keep 3 to 4 days in the fridge; reheat at 325°F for 10 minutes. Freezing is not recommended — cream cheese turns grainy when thawed.
