Brownie Batter

  • 1 cup unsalted butter, melted
  • 3/4 cup Dutch-process cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

Ice Cream Layer

  • 2 pints high-quality ice cream (vanilla or favorite flavor)
  • Flaky sea salt, for finishing (optional)

Instructions
 

  • Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper, leaving an overhang on the two long sides.
  • In a large bowl, whisk the melted butter and both sugars until smooth. Add the eggs one at a time, whisking well after each, then add the vanilla. Whisk until glossy and smooth, about 1 minute.
  • In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder.
  • Pour the dry ingredients into the wet mixture. Fold gently with a rubber spatula until just combined and no streaks remain. Do not overmix.
  • Pour the batter into the prepared pan and spread evenly. Bake for 25–28 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached.
  • Let the brownie cool completely in the pan, then lift it out using the parchment handles. Wrap tightly in plastic wrap and let rest on the counter for 24 hours. This is critical for texture.
  • The next day, soften the ice cream at room temperature for 10–15 minutes until spreadable but not melted.
  • Cut the brownie slab in half crosswise. Place one half on a cutting board. Spread the softened ice cream evenly over the top. Place the other brownie half on top and press gently.
  • Wrap the assembled sandwich tightly in plastic wrap and freeze for at least 4 hours, or overnight, until solid.
  • Unwrap and cut into 12 rectangles using a sharp knife. Sprinkle with flaky sea salt if desired. Let sit at room temperature 2–3 minutes before serving.

Notes
