The Pink Chai Recipe That Actually Turns Pink — Kashmiri Noon Chai, the Slow Way

This is the pink chai recipe that actually turns that deep milky rose color — no food coloring, just fresh baking soda and a furious boil. Serve it warm with crushed pistachios on a slow Sunday morning.

Ingredients
  

  • 2 tablespoons Kashmiri noon chai (green tea) leaves
  • 1/2 teaspoon baking soda
  • 4 cups water
  • 2 cups cold water
  • 2 cups whole milk
  • 3/4 teaspoon fine salt
  • 4-5 green cardamom pods, lightly crushed

For Serving

  • 1/4 cup crushed pistachios
  • 2 tablespoons slivered almonds
  • to taste sugar

Instructions
 

  • Bring 4 cups of water to a rolling boil in a 4-quart saucepan over medium-high heat.
  • Add the tea leaves and baking soda. Stand back a little — the water will foam up fast. Stir once.
  • When the foam reaches the top of the pot, pour in about half a cup of cold water. Let it roar back to a boil, then douse again. Repeat 3 to 5 times until the liquid is deep brick-red.
  • Take the pot off the heat and pour the red tea from high up — at least two feet — into a second pot or measuring cup. Pour it back, again from high, two or three times.
  • Set the pot back on medium heat. Pour in the whole milk and salt, stir once, and watch for a rosy bloom spreading from the edges toward the center.
  • Turn the heat to low and simmer gently for 10 to 12 minutes, stirring now and then, until the chai coats the back of a spoon.
  • Add the crushed cardamom pods, cover the pot, and steep off the heat for 5 minutes.
  • Strain into small cups, top with crushed pistachios and slivered almonds, and serve with sugar on the table.

Notes

The baking soda must be fresh. An old box won't pull the color, and you'll get brown tea instead of pink. If the tea hasn't reached a deep brick-red before the milk goes in, keep dousing it — the milk can only turn red tea pink.
Finished chai keeps in a covered jar in the fridge for 3-4 days. Reheat gently on the stove. The color deepens overnight, which is normal. The tea base (before milk) freezes for up to a month.
Whole milk gives the truest rose color. Full-fat oat milk works but turns it a peachy blush; almond milk turns gray, so avoid it. Give the salty version an honest cup before adding sugar.
